Our chips were a tad too salty for my liking but that was due to me using too much kosher salt overall, I added a pinch too many. The chips were definitely not overly greasy and had a nice flat texture that was both palatable and easy to grab. I'm very interested in trying to expand the recipe to more traditional potato chip flavours that I enjoy such as lime and black pepper. But I will definitely be making them again as they were a cheap healthy alternative snack food.

Hmmm, I might have to give those a try. I've had fried spinach at a couple of restaurants, but it always seemed bland and too greasy. This sounds like it keeps a little more of the substance of the greens.
